These werent actually eaten in one day, they are parts of two days meals. The above chart also does not include any snacks or beverages I consumed. This is just a good way to show you what kind of nutrition my main meals have.

Looking at this though, it shows that I am in fact lacking in FRUIT! Grrr I cant wait for summer! Today I am planning on getting a big bag of Grapefruit and peeling them all and putting them in Mason Jars to eat throughout the week. I love fruit, and I get sad when I don’t have it. Other than that each meals includes Whole Grains (the toast, the Orzo, The macaroni) and a healthy Protein (Organic Eggs, Low fat turkey Sausage, salmon) I also managed to get veggies in two of the dishes (Kale in the Mac-n-cheese and Asparagus).

Obviously all the meals do include carbs.  I usually do at least one meal a day without carbs, but the carbs were all whole wheat. The Mac-n-cheese is a “were too lazy to cook and we want comfort food” meal for Mr. Gaunt and I. I get the Back To Nature 100% Whole Wheat macaroni and White Cheddar at Sunflower market or Whole Foods. We almost always add a lean chicken sausage to give us a little protein, and yesterday I chopped up some kale and threw that in (I’m pretty much convinced you can throw Kale in anything). As soon as I did this (added the Kale) it got me thinking about Kids and feeding them vegetables. Teaching my children good nutrition is really important to me, and I plan on doing a post on this at a later date.

The Salmon is also a new thing. I have been purchasing Tilapia because its cheap and easy and lower in fat, but have recently heard poor reviews on its nutritional values. As a kid growing up in Washington I was always the odd man out because I hated Salmon and people cook a ton of it there. As I’ve gotten older my taste buds have changed greatly and now I really like Salmon. The cost is a lot higher (almost twice as much) for frozen Salmon Filets at Costco versus Tilapia, but investing in my health is what this year is all about! So Mr. Gaunt and I bought the Salmon and we attempted to grill it (on our cooktop grill) last night. Things started out well but then flipping the steaks caused them to break apart, so Mr. Gaunt just chopped them all up. It was actually quite yummy because it has a bunch of crispy parts. We put it on a bed of Orzo with some sesame asparagus, delish.

Anyway I just wanted to show some good healthy meals that are pretty damn easy if I do say so myself. Now Im off to get Grapefruit!

Chips with Protein!

Umm I love chips. Did you know this? I love the salt and the crisp, all of it…yumm! I do however avoid them for the most part, because I will eat the whole bag….snack size or larger. So I’m always on the look out for a good chip that wont screw up the scale.

We were at Mr. Gaunt’s mom’s house tonight and she gave me half a bag of these Newman’s Own Organic Soy Crisps, and they are so good I had to share them with you! First of all they are soy, which is better than rice as far as I’m concerned. They kinda taste like a thin rice cake only better. The flavor she gave me is BBQ, so I don’t know about the other flavors but these are delish!

Now as far as nutrition goes these ROCK! The bag has 3.5 servings in it with SEVEN grams of protein per serving and only 110 calories! Hello! They also have 3.5 g of fat and 3 grams of fiber. In WW speak they are 2 points per serving. They are also GLUTEN FREE  and ORGANIC!

She got them at Sprouts, but I’m sure you could find them at Whole Foods or any other organic grocer. I’m definitely going to try other flavors (white cheddar anyone?)!

i gotta lot to talk about

Ok just a big blabbering of topics, would love comments or advice on any of them:

1. Protein and Bringing Back Eggs: Now about a month and a half ago I gave up eggs. This was after reading Skinny Bitch and deciding that I need to go as close to Vegan as possible. Well since then the weight went downa  good 10lbs, but now it is resting in a slump…boo. My big concern is Im not getting enough protein to help with err…digestion. I mean I eat fiber like its going out of business, but fiber has to have something to stick to (like protein) to work its magic. I tried the whole Greek Yogurt thing and just didnt like it (but please note I have creamy texture issues….do not make me eat pudding…gag) I dont do beans in the AM cause they take too long and that just seems odd. So Im thinking of bringing back the eggs, or egg whites, or Egg Beaters. Opinions on this? I need to do a little diet re vamp in hopes of shocking my body into dropping weight again.

2. Food Processors: I want one. A good-ish one. Easy to clean, under $75. Tell me what you know.

3. Wii Fit and Golds Gym for Wii: Im trying to do my Wii Fit more, trying to boost my working out in all ways. Mr. Gaunt bought me Golds Gym Cardio for Wii so far Im not in love, it seems to pretty much be only boxing with a little jump rope. Im gonna try it with Mr. Gaunt and see if he can figure it out for me. It does play Journey though when your working out so thats at least 5 cool points.

4. Underwear: I finally got new underwear! I bought a number of kinds, but my favorite are these cute ones from American Eagle 5 for $25! Woo hoo! I also got two new bras at Vicki’s. I heart new undies!

5. WORK WORK WORK: So they moved me BACK to the front end, so no more chickens, this is not because I said something, but becuase they are dumb and mixed things up. Although yesterday I got to be door greeater for 8 hours. My feet hurt. I interviewed last Thursday for Mr. Gaunts team and will hear in a week or so. Fingers crossed.

6. Crafts: I have my first craft fair coming up in October. I signed up back in May I think. I have since put my Etsy shop on vacation because I was focusing on all this stuff. The show is over the weekend and my work wont let me have it off, hopefully by then I will have a new job starting shortly and can just quit. I think I should start working on stuff again, get back into the whole crafting thing. We’ll see.
