St. Patty’s Day Pizza

Ok this is  a few days old, obviously St. Patrick’s Day was last Wednesday. originally I was planning on looking up something Irish to make for dinner, but that would have entailed going to the grocery store and buying more food, and that is NOT in the budget. So I decided if I couldn’t be IRISH it could at least be GREEN!

I whipped up this MEAN LEAN GREEN Pizza last-minute and it was SUPERB! The whole time we were eating it Mr. Gaunt and I kept saying things like “God I love Kale” and “How did we go so long without eating all these veggies” and “This might the best Pizza yet!” It was quite lovely.

Ok so this Pizza is a Whole Wheat crust from Whole Foods (comes in a two pack and it is by far the cheapest and best crust) with olive oil and garlic brushed over it. Then comes a layer of VERY thinly slice turkey sausage. After that is Onions, Kale, Broccoli and Mushrooms. I sprinkled a little more olive oil on top, topped with Mozzarella Cheese and a few dollops of Cream Cheese.  Bake per crust instructions.

The Kale gets all crispy and yummy (which only makes me more excited to make Kale Chips) and the light olive oil sauce is really just perfect. I would absolutely make this again, and it was MAJOR GREEN! Yay no pinches for the food!

Today we are going to brunch for Ms. G’s Birthday at Fresh Fish Co. We were suppose to go Friday night but it snowed a ton. Today however it is a lovely 50-60 degrees and I will be wearing this adorable wool pleated bubble skirt (with pockets)I got at the Gap a few weeks ago for $8.99!

I also got these cute Sailor style Button up the sides dress pants ($6.99) and a Bubble Shift Dress ($3.99). Sorry for the nasty face and hair, this was when I was super sick.

BBQ and Baseball

Well no weight has been lost, none. Thats fine though. I’m still really trying to enjoy myself and my achievements and not freaking out about not dropping weight so fast. I know this summer when the pool is open and Mr. Gaunt and I can walk the trail in the evenings that the weight will still come off. Today we got a call from a friend of ours about joining a Softball league by our house. Mr. Gaunt and I played on a Home Depot team for 2 seasons up in Boulder, but havent played really in about a year. I LOVE softball even though I kind of suck at it. I get to play catcher which is my favorite position.  Mr. Gaunt plays first base because he is tall and fast. Anyways we will be playing catch at the park now and hopefully hitting up the batting cages a couple times a week now. I’m very excited.

Last week we made BBQ chicken Pizza which was delish! It’s just a basic Whole Wheat Thin Crust Pizza from Whole Foods, with BBQ sauce, Chicken, onions and cheese topped with Cilantro. Oh and I just noticed we also put dollops of fat-free Cream Cheese on it too! It was splendid.

The drink in the first picture is my new favorite! Its called Steaz Zero Calorie Sparkling Green Tea, and I buy it at Big Lots or Whole Foods! It’s a lot like Izze Esque only it has Green Tea in it, and its cheaper (at Big Lots), Im a big fan.

Squash Pizza

Mr. Gaunt and I made pizza tonight. I skipped my weigh in because I don’t think I lost more than maybe a half pound. It’s fine, I maintained nicely all through Christmas, what more could I ask for? Anyways back to the Pizza, I posted earlier that I planned to make this squash pizza, but laughed out loud when I read they wanted me to cook the Butternut squash for an hour and also spend an hour caramelizing onions…ha! I wish I had that kind of time and motivation. So I adjusted things a bit to make them fit my time frame.

INGREDIENTS:
-Pre Made Whole Wheat Pizza Crust
-Minced Garlic
-Olive Oil
-1 small diced onion
-5-6 large Thyme Leaves
-1 Cup sliced Mushrooms
-2 Chicken Apple Sausages diced (optional, skip for Vegetarian)
-1/2 Cup 2% Mozzarella Cheese
-1/2 an Acorn Squash
-3-4 small red potatoes sliced
-2-3 Tablespoons Light Alfredo (or Olive Oil)

DIRECTIONS:

Preheat oven to 400

-Cut Acorn in half and scrape seeds and pulp out. Spray with Pam and sprinkle with garlic salt. Put in deep microwavable dish, add 2 or 3 tsp. water (just enough to make steam). Cover well with plastic wrap. Cook on high for 10 minutes.

-Saute Diced onions and Garlic in a large pan. Add Mushrooms. When mushrooms are soft add sausage. Saute it all until nice and brown and cooked. Turn burner off and sprinkle torn up Thyme Leaves on top, let sit.

– Slice Red Potatoes thin (best if you have a mandolin – Which I got for Christmas!)

-Spread Alfredo (or olive oil) onto Pizza Crust. Sprinkle lightly with cheese

-Dump The Onion Garlic Sausage mix evenly onto Pizza Crust

-Spread out raw Potato Slices evenly on top

-Scoop Out small clumps of the Acorn Squash and place evenly on top of the potatoes

-Sprinkle with Cheese.

Place in oven and cook for 15-20 minutes until cheese is golden. Let cool and serve. This is ABSOLUTELY the best pizza we have ever made! Everything was perfect! Oh and we Netflixed Mad Men and watched the first episode. The Feminist in me want to scream! Im going to give a few more episodes, people seem to love it.

Anniversary, Pizza and Weight Loss

First thing is first, yesterday was officially my three year anniversary of living in Colorado. This my friends is a feat in itself, a struggle along a very bumpy path. I have gone back and forth in my feelings for Colorado, and for Washington for that matter. At this point in time life is going pretty well and I have a wonderful path (of weight loss) that I am focusing on, that in this environment is working. I also have Mr. Gaunt here and that is quite nice. Im up in the air about my next step, and right now I am living in the moment and staying focused on me.

Next up Weight loss! I went to my meeting this morning before work and had a successful 2.2lb loss! Woohoo! That puts me at 45.2 overall, just a mere 4.8lbs aways from my Halloween goal of 50lbs! It would be so nice to hit that early.  Most of my goals have come a little early but the 50lb goal is a HUGE one, right below 75lb (which in my head is the biggest goal which I hope to hit by January). So none the less Im going to continue to workout at the gym and eat well and go to my meetings and widdle away the weight. With the winter coming up I need to look into some warmer clothing especially a coat, but I would love to be down another 10lbs to go shopping for those, fingers crossed the weight loss comes before the snow.

Oh and last but not least Pizza! I worked late tonight so Mr. Gaunt made me this pizza. No recipe but the ingredients are Mozzarella, artichoke hearts, tomato, pesto, onions, spinach, spinach sausage (on half) and feta. Lordy was it delicious!

No!

Kidding. (= of course in generall ALL pizza SUCKS for you! Seriously, you think a slice of vegetarian pizza wont be too bad but according to WW the average slice of vegetarian pizza is SEVEN POINTS! Yeah and like your gonna stop at one slice…ha! Anyways Im not crazy about pizza, but I sure dont mind it either! The other day I bought a whole wheat thin crust pizza crust at Whole Foods, and then two nights ago MR. Gaunt and I made this:

Its Whole Wheat Pizza Crust (pre made, thin crust), a little home made pesto for sauce, fresh spinach, chicken (on Mr. Gaunt’s side) cherry tomatoes and mozzarella! So so yummy! No points or recipe or nutritional info on this one, just yummy food porn. You should try your own! Avoiding meat and limiting cheese is key!
