What I’ve Been Eating

I am a shamed food photographer in that I threw away (my old crappy falling apart) light box and have yet to build a new one.  Oh it’s on the list right next to “carve pumpkins” and “clean out my fridge”. However I still have managed to take some pictures of what we’ve been eating recently. My biggest kick is pumpkin right now, I’m pretty much eating at least one pumpkin flavored thing a week…its so nice!

Stuffed Acorn squash – Half an Acorn Squash stuffed with Dirty rice, onions, peppers, and Apple Chicken Sausage.

Grilled Panini – Chicken, Pesto, Spinach, Red onions and Swiss cheese.

Roasted Potatoes – Yukon Gold Potatoes, Onions, Corn and Apple Chicken Sausage roasted with mixed seasoning and olive oil.

Spinach Spaghetti – Ground Turkey, Tomato Sauce, Whole Wheat Pasta and lots of spinach

Ezekiel Bread with Swiss Cheese, Tomato, Avocado and salt and pepper

25 things I learned before turning 25

On September 12th I turned 25! Yippee! 25 to me feels like a nice grown up age, and I am happy to be here. And so in my old older age I would like to share 25 things I learned before turning 25:

1. Drama, as much fun as it seems at the time will never make you happy.

2. Relationships are a roller-coaster of hard work and smooth sailing.

3. You can always change your habits, it just takes desire.

4. Take care of the ones you love, and they will stay with you no matter how far away you are.

5. Forgiveness is for yourself, and no one else.

6. Treating your body good will reflect in all aspects of your life.

7. Men can change on their own, you just cant force them to do it.

8. Money will come and go, the stress it puts on you will stay much longer.

9. Behind every happy couple is an understanding of partnership. One that can not be broken.

10. Finding a happy medium between enjoying solitude and enjoying company is very difficult.

11. Nothing is a pressing as the one who’s pressing would like you to believe.

12. Family is a constant work in acceptance.

13. Opening up and sharing your insecurities makes others like you more, not less.

14. Everything in moderation.

15. Enjoy the seasons, they are one of the few constants in our lives and can always bring back memories we had forgotten.

16. You can say “I’ll never” as much as you want, it doesn’t mean its true.

17. It’s a comforting feeling to look back and realize your were a dumbass.

18. Prioritize happiness. Always.

19. If you can’t go to school, then you must let the world around you teach. Open your heart and mind to life’s lessons.

20. Reading lets your inner dialogue run wild. It’s good for the soul.

21. Find the little things to enjoy in the present. Waiting for the future is exhausting.

22. Find a partner who loves and respects you more every single day. It will bring such happiness.

23. Be the change you want to see in the world. And don’t let anyone tell you that you can’t help fix it.

24. Crying almost always makes me feel better.

25. Trust in yourself, trust in your friends, trust in your family.

I leave you with pictures from my birthday. Mr. Gaunt and I celebrate “Birthday week” the whole week before your birthday! It was the week before we got paid so we were a little broke.  Mr. Gaunt still wanted to do something sweet every day so he staked out areas around town that had little public gardens and he cut me fresh flowers every day!

It was the Broncos first game of the season on my birthday so I put on some Broncos apparel and pretended to root for them…lol! I have decided (since I really don’t care) to be a Broncos Fan for Mr. Gaunt. We will also be raising our children as Broncos fans, despite the fact that we will be in Washington. Its something that makes him happy, so I am happy to do it.

For dinner we dressed up and went to Sushi Den with Jenny and Justin. So yummy! I even got my favorite Green Tea Ice Cream to blow out my candle!

Lists are for Lovers

I have decided to make a list of all that’s going on in the next bit. I’m feeling a hair overwhelmed and I think a list will help me focus! Today Mr. Gaunt and I DEEP cleaned our spare room (which is mostly craft supplies, office stuff, and board games) and got rid of a ton of crap! Well we put it into bags and boxes in hopes of having a big garage sale. We wont really be able to have another garage sale before we move so I hope we can sell most of it this summer. I’m going to really try not to buy anymore stuff over the next year. We will be moving and then getting married, so we will need to get rid of lots and then get new nicer stuff. For birthdays and christmas and such I’m hoping to DO fun things rather than buy more stuff we don’t need. Even clothes, and I’m a clothes WHORE! But nope…no more clothing shopping for me! I have plenty! Except new underwear, Id like new underwear and new tennis shoes for my birthday.

I’ve also come to the realization that the less clothing and dishes you have, the less laundry and dishwashing you have to do…DING DING DING! So Buh-Bye to all the “extra” dishes we only keep as backups. And Buh-Bye to all the crappy tank tops and ill fighting jeans that I only keep incase the good ones are dirty. I hate them anyways and they just cause more mess!

I’ve mentioned before that we don’t have a garage or yard to have a garage sale, so I’m hoping one of our wonderful friends will offer theirs up…wink wink. Because I hate to just donate all this stuff when we could maybe make a little cash, which we DESPERATELY need.

Anyways on to my list:

1. August 23rd **fingers crossed*** I move to Mr. Gaunt’s Team at Work

2. Decide which car we are going to sell. We may now sell Mr. Gaunt’s for a number of reasons.

3. Get Credit cards! We NEED to build credit in the next year.

4. Have a new tail pipe put on Mr. Gaunt’s car

5. CAR WASHES!

6. Look into getting an engagement ring made. financially we have been holding off on this…)=

7. Join the gym! Mr. Gaunt wants us to both go together and get our butts in shape for the wedding!

8. Get new Tennis shoes. The ones I currently have my mom bought me in August of 2006 right before I moved to Colorado.

9. Talk to our Landlord about signing a 6 month lease.

10. September 25th Put deposit down on Wedding Venue

11. Plan trip for just me back to Washington in DEcember to look at wedding stuff

12. Pay Mr. Gaunt’s mom back for…oh a million things…lol! We should just give all of our paychecks to her!

13. Keep working on paintings! Mamma needs some new shoes!

14. Look into rescuing a new kitten. Dumb friends league of Denver is doing free adoption and spaying until 8/31

15. SAVE $$$ SAVE $$$ SAVE! We gotta move and pay for a wedding this year!

The Heat Is On

HOW TO HAVE A PERFECT SATURDAY:

1. Start with 86 degree weather, and Breakfast at Merles in Littleton, including a fruit and yogurt cup in Margarita Glass.

2. Hitting up MULTIPLE Goodwills & Savers.

3. Finding cute summer clothes

4. Mr. Gaunt finding a brand new golf bag and gently used clubs for $10!

5. Finding the complete Planet Earth Series on DVD for $9!

6. Buy a new Bocce Ball Set at Target!

7. Have a yummy Salad (spinach, blueberries, strawberries, grilled chicken, goat cheese) and Carrot cake from Super Target’s Deli!

8. Take a walk through the landscaping job Mr. Gaunt did last week.

9. Meet up with Jenny and Justin and Liam to play Bocce Ball in the park

10. Watch Liam really walk around, and then make you muffins on his tool table.

10. Fight against the wind, It made the 86 degree weather  little more bearable!

11. BBQ with Friends

12. Drink Bud Light Lime

13. Love your love.

Im Spoiled

With the best friends in the world. Seriously! Besdies the fact that I love Washington and my family, the thing I miss the most is having such a close group of girl friends. Friends to have dinner with, talk relationships, get drunk. Oh how I miss these girls so!

Dann, Mal, Kells, and Me

My trip to Washington (last weekend) was mighty splendid. I’ll save you the pain of scrolling through (over 350) pictures and just post special ones over the next few posts. Lots of food and family good times. I had such a great time with my friends, I love them all so dearly. I just really cant explain how sweet they all are and how much they mean to me (but I will try):

Mal- I really love that the older we get the closer we get. I love that we are in such similar places in our lives, and that we came from such similar places. I love that you know everything about my past, and present. Growing up I felt like we always had little teenage rifts, but now as adults in healthy relationships, I love that I have someone to talk to about my life, who understands. I can’t wait until we get to help plan each others weddings, and be moms together! I LOVE YOU SO MUCH!

Kells- Although I am secretly jealous that you look so damn skinny, I’m so proud of you! It’s nice having someone along for the (somewhat painful) ride. I know we are in much different places right now, and that maybe we don’t have the same plans for the future, but you will always be my tattoo twin (one of them) and my inspiration. I hope all things with school, love, job, and family come together for you this summer (an forever). I miss seeing you on a regular basis, I can’t wait for you and mal and me to live in the same city again!

Hil- I always forget how damn pleasing you are! How I wish we lived closer so we could hang out more! I love that you and Coral seem so cute and happy together (you both deserve it). I’m so impressed that you have gotten your shit together and have a REAL job…lol! I always knew you would! Many more dinner partie with you and Coral and Manda need to happen in the future! Love you!

Manda-Panda – I think this weekend was one of the best I have had with you! God you are so much fun! A perfect hostess and a prefect drinking partner! Thank you for letting us take over your kitchen (and thank Chris for letting the ladies take over his house). I’m so glad our friendship has withstood the test of time, too many more ladies night in the future!

Dann- Look a picture with you! I know you hate it, but it really means a lot to have a picture of us. Thank you for being so consistent, always being there, always caring. Thank you for still loving me even though I forget to call you back, and I have promised to move back to you more times than I can count. Thank you for always reminding me of the fun we had as teenagers. I miss you more than you could know!
