Coconut Cocoa Oat Cookies…whatever

I really wanted to bake something chocolate last week, which is sort of odd for me, because I really wouldn’t say I’m a chocolate fan. I like chocolate, but if given two choices, I’m almost always going to pick the non-chocolate option. Needless to say I had some fancy Cocoa powder that I wanted to use, and a craving to make a slightly healthier cookie too. Mr. Gaunt LOVES cookies, but he kind of hates my healthy cookies. I was hoping the cocoa powder would make them less “healthy tasting”. The recipe I used is:

1 1/4 cup rolled oats (not instant)
1/3 cup sugar
1/4 cup cocoa powder
pinch salt
2 eggs
1/4 cup Coconut Oil
3 T Agave

1/2 Cup shredded coconut

Mix all together, bake at 350 for about 12 minutes.

I used this recipe, but made a number of adjustments. My cookies were ok, but not fluffy, so following her recipe more directly might yield better results.

I thought they were yummy in a dark chocolate, not too sweet sort of way. Which is good because then I only eat like 1 a day.  As usual I think Mr. Gaunt could take or leave them. Don’t worry, I’m planning to make him this cake for his birthday next month. Full, fat, full sugar.

Can I also just say that I am super obsessed with PicMonkeys Halloween features. It makes me want to deck out my front porch all goolish!

Fall Fun Bonanza!

I like to use the word Bonanza whenever possible. Seriously.

October was whirl wind of activities! Bonfires, Antique Shopping in Lynden, Thrifting Dresses and sweaters, wearing tights, Eating Man Pies. How I love fall! I’m so glad it is taking so long for all the leaves to change. I’m so glad that the weather goes from rainy to sunny and back again, never too hot, never too cold. I’m so glad that Mr. Gaunt takes me on dates, and we eat outside in our coats. I’m so glad we switched our roadtrip snacks from Sunflower seeds to Pumpkin Seeds. I think November will just be another extension of October, and I will ride this pumpkin flavored, maple leaf smelling, puffy vest wearing coat-tails all the way to Christmas!

Finding Focus

I’m having a bit of a struggle these days finding something to focus on, and feeling strong enough to actually do anything. A killer headache that lasted all day today made me feel fat, lazy and sad. I feel like the wedding really took a lot out of me, and mellowing down is both much need, and frustratingly difficult for me. I WANT to do nothing, but after a few hours of laying around I feel the internal struggle of my mind saying “You should be doing something!” Sigh.

The wedding also produced a lot of stuff and a lot of garbage. Lots. It’s taken us 3 weeks to get it all under control, and we still have boxes of stuff to sell or give away, and wedding gifts to find a home. Before we moved I had made an honest effort to downsize and get rid of all the extra STUFF, but now its back! Gah! A lot of it has to do with the fact that there are 3 grownups living in a pretty small 2 bedroom house, plus my sister has some stuff in our garage, and we have a bunch of wedding stuff. On top of that, our neighborhood LOVES to give stuff away for free, and the men in my house love to scoop that stuff up. We have an excess of patio furniture, chairs, tools, etc in our garage, all that we got for free.  Needless to say I foresee a garage sale in the spring. We are also sharing 1 dresser and 1 TINY (like 3 feet wide) closet between the two of us, and that just sucks!

My job right now is well…boring. It is what it is, it’s not the worst thing in the world. The biggest problem is that it gives me way too much time to think about things. I sit and think about all the things I should do, with my job, my blog, my life in general. Its frustrating. I so want to have the strength and energy to move forward on some of my projects, but for whatever reason, I’m just not able to. I often think I need a partner (not Mr. Gaunt) to be the 2nd half to push me into something. My job is also making me take 5 unpaid weeks off before January 27th…eeek!

Lastly, my weight. I had planned to give myself a month off after the wedding, to chill out. To eat what I want, and not workout. I’m 3 weeks in, and I feel like shit, absolute shit. I feel fat and bloated, my skin feels bad, I feel tired and weak all over. Before the wedding, despite not having lost much weight, I actually felt really strong and fit. I was running 12-15 miles a week, eating small healthy foods, and felt pretty good. Cutting myself off from all of that (as fun as it might have seemed) has made me feel awful. I think tomorrow I will go running again (which I can now do outside as it’s not too hot) and ditch the sweets, cheese, cream, fat, carbs. I need more lean proteins, vegetables and water in my diet…STAT! I actually haven’t stepped on a scale in over a month, and I’d like to feel comfortable enough to do so by the time we go to Colorado (November 26th).

So for now I’m working through each day, trying to let life flow naturally and not stress about what I should be doing, could be doing, or want to be doing.  Oh and the pictures through out this post are just random fall fun (:

 

Making Fall Wreaths

I didnt actually take pictures of our Wreath Making Process, but today my good friend Manda and I watched Step Mom (BEST fall movie EVER) and made awesome Fall Yarn Wreaths!

We got everything at Joann’s this afternoon, and whipped these bad boys out in a about 3 hours. The wrapping of the yarn takes the longest. Here is a link of a good How To in case you want to see how its done. We didn’t do the traditional felt flowers, instead we bought little Fall Embellishments that we hot glued on, or stabbed into the foam. I added a few Pom Poms from my wedding too!

I think they are so cute! My front door looks adorable, until you look up and see the spider web Mr. Gaunt put up…(: He’s making tombstones for the yard today too! I love living in a house.

My Interet is having some crazy problems. All my speeds are good except my “upload speed” which is at 0% whatever that means. We bought a $100 router, only to return it after 3 days, it was not the problem. Finally after failed over-the-phone problem solving, Comcast will be out this afternoon, yay! So I have 2 picture-less blog posts waiting to be shared when it’s fixed.

Its Finally Getting Chilly!

So of course I went to Savers (Value Village) and got some sweet sweaters! I love fall! This Fall we happen to be super busy and we just never made it to the Pumpkin Farm…sad day. We also have yet to decided on costumes. Oh well, can’t be perfect every year, or most years…lol! We only have 10 days until our craft fair. Business cards have been ordered, doors have been painted, order forms are being written, paintings are getting wrapped in tissue for travel! Exciting stuff!
