Spring Rolls NOT FRIED!

Whenever Mr. Gaunt and I go to Pho, we always get the Vietnamese Spring Rolls with Peanut Sauce. they are really fresh and yummy. Not that a deep-fried spring roll isnt yummy every now and then, these ones are just so guilt free.

I have been wanting to try to make them for a long time, but could never find the right wrappers. I could always find the kind you fry, but not the fresh ones. Last week I was at Whole Foods looking at the Asian Noodles, and there they were! I guess I assumed they would be in the refrigerator section like the frying kind. They aren’t, they are dried on the shelf in the asian aisle.

A few days later Mr. Gaunt and I walked (yup we walked 3+ miles 3 times this week!) to Whole Foods and got some veggies to make these rolls. I didnt really have a specific recipe, but a number of them said to use the following:

-Cucumber

-Cilantro

-Carrots

-Sprouts (that we got in our Door to Door Organics box)

-Cabage

-Shrimp (optional if you are doing Vegan or Vegetarian version)

I definitely wouldn’t say these are easy or fast. Theres a lot of prep work, and a lot of mess because you cut everything into tiny match sticks. You have to thaw shrimp and you dip the rice paper wrap in water to make it soft. I think these are well worth paying for. Still kind of fun to make.

The wrapping was the hardest part. I imagine its like learning to swaddle a baby, the first time you do it its all messy and not tight. I struggled to not tear or tangle the rice paper. In the end a few were ok looking, but most of them were saggy and wrinkled. Oh well. Also we didn’t do peanut sauce, so we just dipped it in Hoisin Sauce that we already had on hand.

My Sister

I haven’t talked much about her, but I have a very swell little sister!  Her name is Taylor and she is TWENTY (I like to think she’s 12) years old! She lives in Portland Or and works at the Starbucks. Anyways, I dont get to see her nearly enough, sucks not being in the same city and being too busy and too poor to travel whenever I want. I do plan on seeing her this summer for a family vacation which will be soooo nice. She also has the most adorable puppy name Tank:

Anyways a week or so ago I posted a crazy random post about Etsy Tips because Tay just started her own Etsy site! Yay! Crafting Towards October!

I have my first craft fair in October (3 rd from 9-4) and since I have been a total crafting slacker I decided I better get my horse in gear if I want to have anything to even sell! I also put my Etsy shop on vacation almost two months ago so I really need to get that opened again with some new merchandise (you can click on my sold items to see what kind of stuff I was selling).

Yesterday after hearing that I got a new job (YAY YAY YAY) I hit up Joann’s and stocked up on some much needed supplies. I then spent the evening creating a bunch of these tiny banners, perfect for birthdays or holidays or kids rooms. I have about 5 in mid production but this one I finished this morning and even drug it outside to do a little photshoot in the sun!

Moving on, in job news I did in fact get the position with Mr. Gaunts team (but not working directly with him) and I went in yesterday to drug test and sign some paper work. I have to give my current job notice tonight, and who knows whether they will want me to work next week or not, they may be one of those companies that just says “peace out” after you give notice. Which would be fine because New Job wants me to start asap, but no later than the 28th. Im really excited though becuase this new schedule will be amazing, Monday through Friday 6-2:30! That means I dont have to worry about calling out sick every time I need a day or weekend off! Woohoo!

In weight loss I think the week has gone pretty well (except last night taco salad which I attempted to run off at the gym last night) I go in for weigh in tomorrow at 9am, Ill keep you posted!
