Alright, Times up.

TIME IS UP FOR:

-Desserts, after desserts, after desserts.

-Fast food snacks

-Work Potlucks

-Work meeting donuts

-Work Team Birthday Cakes

-Cream, Cheese, Meat, Bread

TIME FOR:

-Meals of mostly vegetables

-High Protein and Fiber, Low carb Breakfast

-Fruit for snacking

-Low meat, low dairy

-EXERCISE!

With Thanksgiving done and Mr. Gaunt’s Birthday finalizing tomorrow. I am OFF the Holiday Eating Wagon and onto the IM A BRIDE IN 10 MONTHS! So it’s on like Donkey Kong! I’ve got about 5 pounds to lose before the New Year, and then Id like to lose another 20 pounds by the time we move, March 11th for me.

I’m still on the fence about the gym. Id really like to go back. I’ve been battling a bit of depression lately, and I know that exercise gives you “happy” endorphins. So I’m feeling like I may need to do it for my weight loss as well as my mental health. I just need to figure out where I can shave $30 out of the current budget for it. Its something Mr. Gaunt and I need to make a priority. And then of course I need to use it, actually go to the gym regularly.

But eating healthy and getting into shape will be my focus. I know there is still Christmas, which brings (yet another) Work Christmas Party AND Work Dessert Party. But you know what, I’ve got bigger things to focus on. One Christmas, or feeling better about myself…hmm…I pick me. Might seem selfish, but it’s what I want to do.

If anyone else out there IN THE WORLD is also making some holiday weight loss plans Id love to hear about them! Sometimes I feel a bit alone in my struggles. Besides Mr. Gaunt, I really don’t have anyone to hold me accountable, its tough. Lately I just havent felt so good about myself, and I don’t like that feeling. I did a really good thing for myself and felt pretty good for a while, but its time to move forward, its time to keep putting along and always working towards a better me.

 

 

Casserole Revamp!

Growing up my family had a favorite meal, so favorite in fact that we actually just called it “The Favorite” as in “Mom please make the favorite tonight!” Yeah it was so amazing. In fact it was one of the first things I learned to make when I moved out, and have made it for every boyfriend Ive had (who of course also love it). But since being on Weight Watchers I just cant bring myself to make it. This is what the OLD recipe intaled:

1-2 cans (depending on how much you were making) of Cream of Mushroom Soup

2-200 Dallops of Mayo, Sour Cream, or any other white creamy sauce

2-200 Cups of shredded cheddar cheese

A good few splashes of curry powder

Maybe a splash of milk and a bit of salt and pepper.

Mix in a bowl.

Layer a LARGE casserole dish with white rice, topped with cooked chicken and cooked broccoli, then pour your cheesey creamy curry mixture on top and sprinkle with MORE cheddar cheese. Bake at 450 until crisp on top. Now eat at least half the pan by yourself. DO NOT SHARE!

Ha! So umm yeah I dont make this anymore for the above reasons! But Mr. Gaunt is ALWAYS asking about it, or encouraging me to try a modified version which I finally got around to tonight.

The new recipe is the following

1 Can of LIGHT Cream of Mushroom Soup

1/2 cup of light Sour Cream

2 Tablespoons real Mayo

A few good splashes of Curry Powder

1/2 cup of grated fresh mozzarella

Mix in a bowl

Then coat a SMALL casserole dish with cooked Quinoa. Add shredded chicken (or not) and broccoli (or mixed veggies if you look in your freezer and realize you dont have any broccoli even though you SWEAR you bought some) then coat with your cream mixture and bake on 450 for about 20 minutes or until crispy.

And the final key is eat only ONE SMALL PORTION AND SHARE SHARE SHARE!

This recipe was obviously not as delicious as the real one, but Mr. Gaunt and his friend both really liked it, and I didnt love it so much that I felt the need to eat 1/2 the pan! Yay! But for real it was pretty good. Oh and add a Spinach salad with tomatoes and Un-Pickled Pickle slices (like a tiny cucumber I bought at the Farmers Market) toss with a little olive oil and vinegar! Yum-o!

Must Keep Eating

With work being all wonky and wedding planning taking up my spare time eating regularly is going by the way side. I mean Im still eating, but things like fiber one bars and fruit, not actual meals…who has time to cook?!!! anyways this week I work at 2:15-9:45 so I have to eat a meal before work so I dont come home starving.

So Im going to post my lunch every day this week. Here is lunch today:
