Apple Picking at Bellewood Acres

Photo from Bellewood Acres

Mr. Gaunt and I went on Monday, after he got off work, to pick apples at Bellewood Acres. Mr. Gaunt has NEVER been to an orchard! Isn’t that crazy? There are lots off funny little things that apparently you don’t know about when you live in Colorado. For instance Mr. Gaunt had never seen a clover patch before. The thought of looking for a 4 leaf clover seemed like make-believe, as clover doesn’t grow wild in Colorado. When he first moved here he wanted to plant FERNS, IVY and BLACKBERRIES in our yard, I kid you not. He didn’t realize that all three of those plants are almost consider invasive weeds in Washington. Along with these, Mr. Gaunt has never picked apples off a tree. Sigh, it’s like have a kid, so sweet to get to do these things with him for the first time. (this winter I’m taking him to a Christmas tree farm to cut down a tree, so excited!)

Anyway I really wanted to make some applesauce this year to freeze (a post coming soon) so we went and picked a 10 pound bag of Apples at Bellewood. If you haven’t been to Bellewood, you should go. They recently built a huge indoor retail/barn/cafe that has all sorts of yummy apple treats! Pies, Apple Butter, Apple Cider, Donuts, and little gifts too! They also have a big pumpkin patch that is back dropped by the breathtaking Mt. Baker!

We didn’t take any pumpkin home, we are waiting until next weekend to decorate the front porch. So we took some photos and look around while we waited for the golf cart to come pick us up to take us out to the orchards. The orchards are HUGE, the start of them is in the upper left hand corner of the above photo. I was shocked once we got back there how large they are, so many kind of apples!

Once the golf cart came, they took us out to the orchards, dropped us off, told us how to properly pick an apple so you don’t hurt the branch, and left us to be. The thing about apple picking is that you are surrounded by perfect apples on perfect short groomed trees. It takes less than 5 minutes to fill a 10 pound bag with apples, but its the experience that counts. We wandered a little and took some photos, then got back on the cart and went back to the barn to pay.

Yesterday I made Applesauce, and a pumpkin Oat bake with Bellewood Apples! I still have a few more, I might make a crisp or something with. Or possibly some unsweetened apple sauce that I can use in place of oil when baking this winter. Needles to say I crossed one more thing off my fall bucket list!

You can add “Little Squalicum” to the list of reasons why our “neighborhood” is awesome. Sunday nights are never boring.

While Hula basked in the sunshine of her new kitchen this morning…

Mr Gaunt and I went and picked up my sisters dog Tank and did the 2.6 mile walk around Lake Padden, followed by Pita Pit. Did you know Pita Pita offers a “Resolution Solution” Pita menu, all Pitas under 500 calories. Not bad, not bad at all.

Followed by a LOT of house cleaning/unpacking/hanging art etc. Oh and we also did some major grocery shopping. For dinner Mr. Gaunt and I both ate leftovers. I had a piece of Veggie Pizza and a spinach/Romain salad with tomatoes sliced and diced all over the top! So yummy.

Such a good Friday with my family. Tomorrow I’m going to help my Made of Honor try on wedding dresses for her wedding in March (which I’m the made of honor for too)! And maybe a trip to Ikea too. And Sunday the whole family is coming over to help us lay a patio out back and have a BBQ!

This is the first time in 5 years that all of my siblings and I have lived in the same city…crazy! I’m so very excited to get to know them (as adults) better.  On my first night here we went to The Copper Hog. I had a Salmon Burger with Avocado, Beets and Grapefruit on it. Not as crazy as you would think. Very yummy.

(sorry no pics of Forrest, have to get him another day)

Could Be’s. Should be’s. Summer Plans.

There are plans in the works for our big move (6 weeks for me) that I’m getting pretty excited about!

I have 2 possible job options, both seasonal, but would give me until the Fall to find something different. Both sound equally appealing, I will be happy with whomever will hire me. Both would hopefully start in March/April.

My mom has also found us 2 possible homes! Both are owned by her landlord, one a funky downtown apartment (that will probably be rented by someone else) and one a “fixer-upper” two bedroom house! The house came as a bit of a surprise, as Mr. Gaunt and I have major down-sizing plans. However this house offers an entirely different set of perks than anything we have lived in before. Like a huge fenced yard with a nice big shop! The yard even has garden beds already built. It is also in need of repairs, which would give Mr. Gaunt and I the freedom to kind of make it our own. It’s not a for sure thing, but I’m getting all excited at the ideas and plans for the summer.

Here are a few things I would like to do this summer:

-Grow our own Veggies! (and flowers)

-BBQ every night that we could (we have owned a BBQ for 2 years now, never taken it out of the box)

-Go for walks around the neighborhood

-Have parties in the yard (might need to hunt out some patio furniture at Garage Sales)

-Drink more (I know this seems like a very funny goal, but I NEVER drink these days and I miss it)

-Dry my clothes on the line (woop such an eco friendly thing)

-Make sun tea

-Attempt to buy local and organic all summer long

-Eat more fish

-Learn how to use public transportation (I know, Im lame)

-Mow a lawn (not joking, Ive never done this)

-Go to a you pick berry farm

-Float the river

-Make curtains

-Finish planning my wedding

-BE HAPPY!

Eeek such good feelings about all of this! Come on good stuff! Very Very Pumped! Now if mom would just email me photos!
