I leave tomorrow night to BEAUTIFUL Bellingham Washington! I can’t wait! I havent been home since July, that was FIFTY pounds ago! Crazy! I’m only going for a long weekend (Thursday-Monday) but I get to see so many friends and family. My sweet sister will be coming up from Portland, my BFF’s Mallory and Kelli will also be coming from Portland and Olympia, and of course my momma, brother, dad and other friends are already in B-ham. Lots of fun has been planned, including my mom’s Birthday on Friday!
So since I will be leaving Mr. Gaunt alone to fend for himself food wise for the weekend, I decided I should make things easy on him. We got our Door to Door Organics box today full of yummy organic fruits and veggies, so I’m looking up recipes to prepare for him while I’m gone.
Also for my moms birthday I want to make her a fun cake. Not a typical birthday cake with major frosting..boo. Instead I think I want to make this Sour Dough blueberry Lemmon cake. I guess my Aunt Kim gave my mom a sourdough starter kit??? and she wanted to use it, so this is what I will be making! It looks really freaking good!
My Door to Door organics box this week has some fun new things! Leeks, Beets, and Eggplant! I have used eggplant before (Mr. Gaunt HATES Eggplant) but the beets and leeks will be something we haven’t done yet. I found these recipes to try:
This Salmon and Leeks Pizza with Pesto sauce looks AMAZING! Of course I will modify the recipe (no heavy cream for this gal) and we wont be making our own dough (when we can buy whole wheat for cheaper!) but the salmon, pesto and leeks will be used! I might even make this tonight.As for the Beets, this Beet Roesti looks pretty darn yummy. Im not sure Mr. Gaunt is gonna like Beets, but I have managed to feed him almost every vegetable I have brought into this house (even eggplant mixed into lasagna) so I trust I can do beets to. This Roesti is almost like a Beet potato pancake, and I LOVE a potato pancake. I think this will wait till next week.
Other than that I’m going to cut up salad for him, and make him a little list for the fridge telling him what he needs to eat (mostly so things wont go bad). I also like to make him pastas and stir fry’s and split them up into tupperware that he can just grab and go in the morning. I find that if it’s there and easy he will eat it.
Oh and because I now have an abundant amount of bananas, I’m going to make these Vegan Banana Muffins from The clean Eating Mama. They will make a great breakfast treat for Mr. Gaunt this weekend!
Oh and because I am just rambling and rambling, I painted my nails white today and I am LOVING it! So this will be my last post until next week. I’m sure I will have a million pics of my weekend vacation to share with you when I get back! xoxo
