Mothers Day 2012

Happy Mothers Day!

It seems everyone I know is pregnant right now, which is not true, I really only know like 5 pregnant people right now, but still, it’s a lot of moms-to-be! Also three of the bloggers I read daily are also pregnant, so I think it’s just in the air.

We had such a lovely mothers day this year! It was actually the first time Mr. Gaunt and I hosted a dinner that wasn’t just my mom and siblings. My grandparents came up for the afternoon too, which was really cool. My grandparents are really awesome people with lots of really great skills. They can cook better than anyone I know (my grandpa is a professional BBQ and they owned restaurants for years) so getting the opportunity to make a meal for them was kind of exciting. The house and yard also look really awesome right now (if I do say so myself) and with prefect weather and a perfect cat, the day was splendid! I felt like such a grown up. I can’t wait until we have kids and can have birthday parties and other fun holiday celebrations at our house.

Mr. Gaunt did all the grilling today, while mom and I made salad, potato salad, asparagus, sangria, chocolate cover strawberries, and garlic bread. Yum. We really know how to eat.

This first photo is really awesome. It’s me and my mom and my grandma, I think it’s the only three generation photo I have, all we need now is a baby (I know I’m starting to sound baby crazy!). We all look so similar, and blonde…lol!

Mr. Gaunt cooked his first Salmon, and we also did steak kabobs and Asparagus on the grill.

My mom bought me that cute cherry tablecloth at a thrift store in Portland, and today she made a quick stop at Kmart where they had flat sheets on clearance for $5, so that’s what that green one is. Who knew a flat twin sheet fit a 6′ card table so well?

Tomorrow its back to work. My back is a bit sore tonight from cleaning, gardening, moving the lawns and cooking all day. Lordy. It’s also back to the gym this week. We took all of last week off from the gym and worked out outside in the nice weather.  This coming week is supposed to be pretty darn nice too, but we paid for the membership so we rally should use it. It’s just so much nicer, and we work out so much longer outside. Oh well. I’m a little sun burnt too.

Warm BBQ Chicken Salad

We are LOVING our BBQ! It’s so nice that I can just throw some chicken in some marinade before bed and Mr. Gaunt can grill it in the morning. Then I have yummy BBQ Chicken to do whatever I want with. Pleasing.

This BBQ Chicken Salad is super easy, healthy and delicious. I had Mr. Gaunt BBQ two LARGE chicken breasts that had marinated in BBQ sauce all night. Then I cut up a zucchini into slices, sprayed with some olive oil and had him grill that up too.

When it was done I cut up half a breast and chopped up the zucchini. Tossed them both in a bowl of Spinach and Romaine, topped with a little Olive Oil/Balsamic/Honey homemade dressing…done!

I love warm chicken in a salad.

Jalapeno Turkey Burgers

These were mild jalapeno Burgers, they were good, but I told Mr. Gaunt that I might like even more jalapeno in it. To top the burgers off we did an Olive Oil Rosemary Mayo, avocado, Tomato, Swiss Cheese, and Spinach. I love a burger with lots of toppings. As a kid we always ordered our burgers “Meat, Cheese, and Ketchup Please!” ha! Luckily things have gotten a bit more interesting since then.

INGREDIENTS:

1 Pound Extra Lean Ground Turkey

1 Tbsp minced jalapeno

1 Tsp minced Garlic

2 Tbsp Bread Crumbs

1 Egg

1 Tablespoon Grated Parmesan Cheese

Salt and Pepper

DIRECTIONS:

Mix all ingredients together (with your hands). Divide into four patties. We cooked ours on our George Foreman, but you could do them in a pan too. It took about 12-14 minutes. Top with Swiss Cheese to melt (on the George Foreman you can even set the lid down onto the cheese for about 10 seconds, it burns a bit to the top but it melt nicely). Make up your burger however you like it. Cream Cheese would also be amazing on these!

Portobello Love

Apparently I am completely in love with Portobello Mushrooms, who knew? I had never had them, although I’ve heard many a times that they are delish as a burger replacement. This past weekend while the boys make steak, Jenny and I tried our hand at Portobello Burgers.

Holy grail were they amazing! For real I didn’t even kind of miss the meat! We used this recipe, although I’m pretty sure we did balsamic vinegar not red wine vinegar. We also made the mayo using that Olive Oil Mayo, so yummy! I would eat these all summer!

I also made a little Strawberry Shortcake with home made whip cream. Lets just say Liam was a huge fan of the whip cream, rubbing his chest (baby sign language for please) ferociously after each bite…lol…too cute!

I’m exhausted! My 3 day weekend has been packed full of socializing, food, and swimming, and Im tired! I hardly did anything productive this weekend, which means this evening will include lots of laundry, dishes and food prep for the week. Until that starts though I have LOTS to blog about! There will probably be 3 posts today for your reading pleasure.

We spent most of the weekend with our friends Jenny and Justin and their 16 month old Liam (our adopted nephew) BBQing and just lounging. Saturday they had a bunch of people over to BBQ, and I brought stuff to make Veggie Kabobs! I love going to Jenny’s because she eats very similarly to us, and always has a chicken or turkey product to BBQ. This time she made the most AMAZING (wish I had a pic) lean chicken and spinach burgers! So good! They were packed full of yummy spinach and spices befor going on the grill. I totally meant to get the recipe, I’ll have her FB it to me.

On to the Kabobs, I went to Sunflower Market which is our local discount organic health food store and bought:

1 Yellow Squash

2 zucchini

1 white onion

1 red onion

1 red pepper

1 green pepper

1 yellow pepper

1 box of mushrooms

ALL FOR $10! Damn vegetables or so cheap its ridiculous! Why anyone says eating healthy is expensive is beyond me (well unless you do major organic)

this made probably 20 skewers.

TIPS:

– Soak wooden skewer sticks in water so they don’t burn up on the grill

-Cut large-ish Hunks of the veggies, they skewer better

-Buy small whole mushrooms or cut large ones only in half not slices. They tend to break off the skewer

-Spray both sides of the Veggie Kabob with PAM before laying on the grill.

Other than that’s its super easy and quick! Just cook them until the edges get a little black and they are done! And super healthy! For leftovers you can de-skewer than and throw them in some whole wheat pasta for a light pasta veggie salad. We ate them 3 days in a row!

Eggplant, Swimming, Grilling, Babies!

Every now and then my fridge gets overrun with veggies. This isn’t  a bad thing, but I HATE when I let stuff go bad (in all honesty it does happen from time to time) so when things are looking too full I often get a little crazy and start throwing mass amounts of veggies into whatever I’m making.

Last week I got an Eggplant in my Door to Door Organics box, I had previously let one go bad so I was determined to use it up! Mr. Gaunt did a landscaping job last week for extra cash, so I was trying to be a good girlfriend and have dinner ready for him. Here lies the problem: Mr. Gaunt + Eggplant =BAD! He hates Eggplant. HATES IT! I thought I could secretly convince him it was yummy by making: Eggplant Parmesan, Eggplant lasagna, and now Eggplant Spaghetti. No such luck.

In the end I picked out all the Eggplant for him, and he was a happy camper, and I got leftover Eggplant all week! Yay!

Along with Eggplant I needed to use 3 tomatoes and 1 zucchini that night. The spaghetti was super easy though, I sautéed the cubed Eggplant in olive oil, then added the zucchini, then the tomatoes. When they were all nice and cooked I threw in 1/2 a jar of Spaghetti Sauce. Poured over whole Wheat past…yum! What’s not to like?  Oh and because I realized Mr. Gaunt would hate it, I added some Mango Chicken Sausage slices (we got them at Costco, and I’m just not sure I really like them) in the end.

Summer is pretty much here now! We are going to a GRAND OPENING POOL PARTY at Jenny and Justin’s this weekend! I’m so freaking excited to start swimming everyday now!  Also on my list of summer LIKES: BBQing! Mr. Gaunt and I own a very nice (never been opened) Charmglow BBQ (similar to this one) that Mr. Gaunt got two years ago on clearance. Problem is we don’t have a deck, porch or yard that we can set it up in, so it sits in Ms. G’s garage in the box. Sad day. I have been CRAVING grilled veggies and corn. Drooling over the pictures on FoodGawker.com. I think I’m gonna bring some Veggie Kabobs to the party on Sunday, and then take some to Ms. G’s house to use on her grill!
